Ingredients

  • 225 gSpaghetti
  • 3 tbspOlive oil
  • 50 gBacon
  • 150 gOnion
  • 1 tspPepper flakes
  • 400 gTomato sauce
  • 85 gParmesan
  • 3500 mlWater

Instructions

    Prep and cook pasta

    • Bring a large pot (about 3–4 quarts) of water to a boil and salt it well.
    • Add the spaghetti and cook about 6 minutes until al dente. Drain and set aside briefly.

    Make the sauce

    • While the water heats, warm the olive oil in a medium saucepan over medium heat.
    • Add diced bacon and sauté until the fat is clear and the bacon begins to brown.
    • Add the chopped onion and sauté until soft.
    • Add crushed red pepper and cook 2–3 more minutes.
    • Stir in the tomato sauce and heat through.
    • Remove from heat and stir in the freshly grated Parmesan.

    Serve

    • Divide the pasta among plates and spoon the tomato-bacon sauce over it.
    • Garnish with extra Parmesan if desired and serve immediately.
