Preheat oven and prepare dough
- Preheat the oven to 250 °C (480 °F equivalent set).
- Stretch the pizza dough (450 g) onto a greased baking sheet to about 3 cm thickness.
- Let the dough rest while you prepare the sauce.

Make the tomato sauce
- Heat a saucepan over medium heat, add the olive oil (3 tbsp) and crushed garlic (2 cloves).
- Sauté until the garlic is just golden (do not burn).
- Add the crushed tomatoes (800 g) and dried oregano (1 tsp).
- Simmer until the sauce thickens, about 15–20 minutes.
- Cool the sauce to room temperature.

Top and bake
- Top the dough with sliced mozzarella (340 g).
- Add any optional toppings such as sausage or pepperoni if desired.
- Spread the cooled tomato sauce over the toppings.
- Bake in the preheated oven for about 15–20 minutes until crust is golden and cheese melted.

- Remove the pizza from the oven and sprinkle with grated Pecorino Romano (3 tbsp).
- Let cool briefly and serve at room temperature or reheat briefly under the broiler.
