  • 240 gCheddar
  • 80 mlBeer
  • 22.5 gMustard
  • 200 gBread
  • 40 gButter
  • 0.5 gCayenne pepper

    Make the cheese sauce

    • Cut the cheddar into small cubes or grate it coarsely.
    • Put the cheddar with the pale ale and English mustard into a small saucepan.
    • Warm over medium heat, stirring occasionally with a wooden spoon, until the cheese has melted and the mixture is smooth. Season with a pinch of cayenne pepper.
    • Let the cheese mixture sit briefly to thicken slightly.

    Prepare the toasts and finish

    • Toast the slices (4 pieces) briefly until golden.
    • Spread the toasts thinly with butter.
    • Two common options:
    • a) Spoon the hot cheese mixture over the buttered toasts and serve immediately.
    • b) Or sprinkle grated cheddar on the toasts, add a pinch of cayenne and place under a hot grill (220 °C) for 3–5 minutes until the cheese melts and gets a little color.
    • Serve hot.
