Make the cheese sauce
- Cut the cheddar into small cubes or grate it coarsely.
- Put the cheddar with the pale ale and English mustard into a small saucepan.
- Warm over medium heat, stirring occasionally with a wooden spoon, until the cheese has melted and the mixture is smooth. Season with a pinch of cayenne pepper.
- Let the cheese mixture sit briefly to thicken slightly.

Prepare the toasts and finish
- Toast the slices (4 pieces) briefly until golden.
- Spread the toasts thinly with butter.
- Two common options:
- a) Spoon the hot cheese mixture over the buttered toasts and serve immediately.
- b) Or sprinkle grated cheddar on the toasts, add a pinch of cayenne and place under a hot grill (220 °C) for 3–5 minutes until the cheese melts and gets a little color.
- Serve hot.
