- 250 gWhite bread
- 500 mlMilk

Prepare the bread
- Cut the crust of the white bread (about 80 g) into small cubes.
- Heat 30 g butter in a pan and toast the bread cubes until golden. Remove and set aside.
- Place the remaining bread pieces (about 170 g) in a bowl.

Soak bread and make the dough
- Mix 500 ml milk with 100 ml water and pour over the 170 g bread pieces. Let soak until soft.
- Stir the soaked bread with 125 g melted butter, 3 whole eggs, 3 egg yolks and 10 g salt until smooth.
- Gradually mix in 820 g wheat flour, then fold in the toasted bread cubes. The mixture should be thick but spoonable.

Shape and cook dumplings
- Bring a large pot of water to a boil and add 5 g salt.
- Reduce heat to a gentle simmer. Use two spoons to form small dumplings and slip them into the water.
- Cover and simmer gently for about 15 minutes until set.

Serve
- Brown 50 g butter in a small pan (watch carefully).
- Drain the dumplings, plate them and drizzle with the brown butter.
- Serve with sliced fruit (e.g. 300 g apples).
