  • 500 gPea
  • 2 pcsBouillon cube
  • 70 gOnion
  • 70 gCarrot
  • 40 gCelery
  • 1500 mlWater
  • 1 gSalt
  • 1 gPepper

    Preparation

    • Optional: Soak the yellow split peas in cold water up to 6 hours to shorten cooking time. Drain and rinse.
    • Peel and chop the onion, peel and dice the carrot, slice the celery stalk.

    Cooking

    • Put all ingredients (split peas, onion, carrot, celery, bouillon cubes and water) into a large pot.
    • Bring to a boil, then reduce heat and simmer covered for 1–2 hours until the peas are tender. Stir occasionally and add water if needed.

    Season & Serve

    • Taste and adjust seasoning with salt and pepper (bouillon cubes often provide most of the salt).
    • Serve hot. Optionally finish with a drizzle of olive oil, freshly ground pepper or chopped parsley.
