  • 900 gPotato
  • 3 tbspOlive oil
  • 1 pcsOnion
  • 1 pcsGarlic
  • 1 tbspPaprika powder
  • 1 tbspTomato paste
  • 225 gTomato
  • 8 pcsBasil
  • 0.75 tspSalt
  • 0.75 tspPepper

    Soak and air-fry the potatoes

    • Soak the potatoes in just-boiled water for 30 minutes, then drain and leave to air-dry for about 5 minutes.
    • Preheat the air fryer to 200 °C.
    • Put the potatoes in a bowl, drizzle with 1 tbsp olive oil and add 1/2 tsp salt and 1/2 tsp freshly ground black pepper. Mix to coat evenly.
    • Place the potatoes in the air fryer basket and cook for 20–30 minutes until crisp and golden.

    Make the tomato sauce

    • Meanwhile, heat the remaining 2 tbsp olive oil in a small pan over medium-low heat.
    • Fry the onion for 8–10 minutes until softened but not golden.
    • Stir in the garlic and cook for 1 minute.
    • Add the paprika and cook for 30 seconds, then stir in the tomato purée and cook for 1 minute.
    • Add the tinned tomatoes and simmer for 5–10 minutes until slightly thickened. Season to taste.

    Serve

    • Tip the cooked potatoes onto a platter.
    • Pour the tomato sauce over the potatoes, scatter with basil leaves and serve immediately.
