- 900 gPotato
- 3 tbspOlive oil
- 1 pcsOnion
- 1 pcsGarlic
- 1 tbspPaprika powder
- 1 tbspTomato paste
- 225 gTomato
- 8 pcsBasil
- 0.75 tspSalt

Soak and air-fry the potatoes
- Soak the potatoes in just-boiled water for 30 minutes, then drain and leave to air-dry for about 5 minutes.
- Preheat the air fryer to 200 °C.
- Put the potatoes in a bowl, drizzle with 1 tbsp olive oil and add 1/2 tsp salt and 1/2 tsp freshly ground black pepper. Mix to coat evenly.
- Place the potatoes in the air fryer basket and cook for 20–30 minutes until crisp and golden.

Make the tomato sauce
- Meanwhile, heat the remaining 2 tbsp olive oil in a small pan over medium-low heat.
- Fry the onion for 8–10 minutes until softened but not golden.
- Stir in the garlic and cook for 1 minute.
- Add the paprika and cook for 30 seconds, then stir in the tomato purée and cook for 1 minute.
- Add the tinned tomatoes and simmer for 5–10 minutes until slightly thickened. Season to taste.

Serve
- Tip the cooked potatoes onto a platter.
- Pour the tomato sauce over the potatoes, scatter with basil leaves and serve immediately.
