Ingredients

  • 2 sliceWhole grain bread
  • 1 pcsAvocado
  • 120 gTomato
  • 2 pcsEgg
  • 0.5 pcsLemon
  • 1 tbspWhite wine vinegar
  • 1 tspOlive oil
  • 5 gChives
  • 1.25 tspSalt
  • 0.5 tspPepper
  • 0.25 tspChili flakes

Instructions

    Prep ingredients

    • Halve the avocado, remove the pit, and scoop out the flesh
    • Wash tomatoes and slice them
    • Juice the lemon
    • Slice chives into thin rings

    Mix avocado spread

    • Mash the avocado roughly with a fork
    • Stir in lemon juice
    • Season with salt, pepper, and chili flakes

    Toast the bread

    • Toast the bread until golden
    • Let the toast cool briefly

    Poach eggs gently

    • Keep water just below a simmer
    • Add vinegar to the water
    • Crack each egg into a cup
    • Slide the egg gently into the water
    • Poach until the whites are set
    • Lift out with a slotted spoon and drain

    Assemble the toast

    • Spread the avocado mixture over the toast
    • Layer tomato slices on top
    • Place the poached eggs on top
    • Drizzle with olive oil and finish with chives
    • Season again to taste
