  • 60 gOat flakes
  • 200 mlMilk
  • 150 mlWater
  • 100 gSpinach
  • 2 pcsEgg
  • 5 gOlive oil
  • 20 gParmesan
  • 3 gSalt
  • 2 gPepper
  • 1 gNutmeg

Instructions

    Cook the oats

    • Toast oats briefly in a dry pot
    • Pour in milk and water and bring to a boil
    • Stir over low heat until creamy
    • Season with salt, pepper, and nutmeg

    Fold in spinach

    • Wash and roughly chop spinach
    • Add spinach to the oats
    • Let it wilt briefly

    Cook the egg

    • Heat oil in a pan
    • Crack in eggs and cook until set
    • Season with salt and pepper

    Plate and finish

    • Divide oats between bowls
    • Place the egg on top
    • Grate Parmesan over
