  • 450 gHalibut
  • 1 tbspOlive oil
  • 4 pcsThyme
  • 1 pcsLemon
  • 60 mlFish broth
  • 1 tbspPepper

    Preparation

    • Preheat the oven to 200 °C (400 °F).
    • Place the halibut fillet in the center of a shallow baking dish or on a sheet pan.
    • Drizzle with olive oil and fish stock. Add thyme sprigs and lemon slices on and around the fillet. Sprinkle with black pepper.
    • Cover the dish with parchment paper and loosely with foil.
    • Bake in the preheated oven for 15–20 minutes, until the flesh flakes easily with a fork.
    • Optional: Remove thyme sprigs before serving and squeeze a little extra lemon juice over the fish to taste.
