Ingredients

  • 140 gRice noodle
  • 45 gPeanut butter
  • 60 mlCoconut milk
  • 45 mlChili sauce
  • 3 pcsGreen onion
  • 200 gCucumber
  • 300 gBean sprouts
  • 200 gShrimp

Instructions

    Cook noodles and make sauce

    • Cook the rice noodles according to package instructions, rinse under cold water and drain well.
    • In a small pan, warm together the peanut butter, coconut milk, sweet chilli sauce and half the spring onions over low heat, adding 1–2 tbsp water until the sauce reaches a drizzleable consistency.

    Assemble salad

    • Toss the noodles, cucumber and bean sprouts in a large bowl.
    • Top with the prawns, drizzle with the peanut sauce and scatter over the remaining spring onions. Serve immediately.
