- 140 gRice noodle
- 45 gPeanut butter
- 60 mlCoconut milk
- 45 mlChili sauce
- 3 pcsGreen onion
- 200 gCucumber
- 300 gBean sprouts
- 200 gShrimp

Cook noodles and make sauce
- Cook the rice noodles according to package instructions, rinse under cold water and drain well.
- In a small pan, warm together the peanut butter, coconut milk, sweet chilli sauce and half the spring onions over low heat, adding 1–2 tbsp water until the sauce reaches a drizzleable consistency.

Assemble salad
- Toss the noodles, cucumber and bean sprouts in a large bowl.
- Top with the prawns, drizzle with the peanut sauce and scatter over the remaining spring onions. Serve immediately.
