  • 125 gRice noodle
  • 200 gSugar snap pea
  • 2 tspSesame oil
  • 4 pcsGreen onion
  • 15 gCoriander
  • 150 gSalmon
  • 100 gPretzel
  • 3 tbspSoy sauce
  • 1 tbspHoney
  • 1 tbspLemon juice
  • 1 tbspPeanut oil
  • 1 pcsGarlic
  • 10 gGinger

    Prepare noodles and sugar snaps

    • Put the rice noodles into a large bowl and pour over enough boiling water to cover them.
    • Add the sliced sugar snap peas and leave for 4 minutes.
    • Drain in a colander, rinse under cold running water to cool, then drain again.
    • Return to the bowl and toss with the sesame oil.

    Make dressing and finish the bowl

    • Whisk together soy sauce, honey, lemon juice, peanut oil, finely chopped garlic and grated ginger until the honey dissolves.
    • Pile spring onions, coriander and the flaked hot-smoked salmon onto the noodles.
    • Pour the dressing over and toss everything together.
    • Serve with pretzels or a bread roll.
