  • 800 gCabbage
  • 30 gCoriander
  • 100 gGreen onion
  • 45 gAlmond
  • 60 gSunflower seed
  • 160 gRamen noodle
  • 300 gChicken breast
  • 120 mlRapeseed oil
  • 120 mlRice vinegar
  • 5 gSpice mix
  • 12.5 gSugar
  • 6 gSalt
  • 1 gPepper

Instructions

    Prepare

    • Shred or thinly slice the cabbage.
    • Pick and roughly chop the cilantro leaves and slice the green onions into thin rings.
    • Shred or slice the cooked chicken breasts into bite-sized pieces.

    Add nuts & ramen

    • Add the almonds and sunflower seeds to the cabbage mixture.
    • Break up the ramen noodles (discard the seasoning packets or keep one for the dressing) and stir them into the salad.

    Make the dressing

    • Whisk together the oil, rice vinegar and one packet of ramen seasoning.
    • Stir in sugar, salt and pepper and adjust to taste.

    Toss & rest

    • Pour the dressing over the salad, toss well and adjust seasoning if needed.
    • Let the salad sit for about 60 minutes to absorb the flavors, then serve.
