- 800 gBarramundi
- 75 mlOlive oil
- 50 mlLemon
- 6 gGarlic
- 20 gCoriander
- 1.2 gCumin
- 1.2 gCoriander seeds
- 0.3 gBell pepper
- 0.3 gChili
- 0.3 gSalt

Prepare the dressing
- Place all dressing ingredients in a blender or food processor (olive oil, ground cumin, ground coriander, paprika, chili powder, garlic, lemon juice, salt, fresh cilantro) and blitz into a smooth dressing.
- Make three slashes on each side of the fish, coat with half of the dressing and let it marinate, covered, for about 30 minutes.

Cook the fish
- Preheat the oven to 220 °C (fan 200 °C).
- Place the marinated fish on a roasting tray and bake for 20 minutes until the flesh is firm and flakes easily.
- Drizzle the remaining dressing over the fish before serving.

Serve
- Arrange the fish on a platter, spoon over remaining dressing and scatter with fresh cilantro.
- Serve with steamed couscous or rice and lemon wedges.
