  • 800 gBarramundi
  • 75 mlOlive oil
  • 50 mlLemon
  • 6 gGarlic
  • 20 gCoriander
  • 1.2 gCumin
  • 1.2 gCoriander seeds
  • 0.3 gBell pepper
  • 0.3 gChili
  • 0.3 gSalt

Instructions

    Prepare the dressing

    • Place all dressing ingredients in a blender or food processor (olive oil, ground cumin, ground coriander, paprika, chili powder, garlic, lemon juice, salt, fresh cilantro) and blitz into a smooth dressing.
    • Make three slashes on each side of the fish, coat with half of the dressing and let it marinate, covered, for about 30 minutes.

    Cook the fish

    • Preheat the oven to 220 °C (fan 200 °C).
    • Place the marinated fish on a roasting tray and bake for 20 minutes until the flesh is firm and flakes easily.
    • Drizzle the remaining dressing over the fish before serving.

    Serve

    • Arrange the fish on a platter, spoon over remaining dressing and scatter with fresh cilantro.
    • Serve with steamed couscous or rice and lemon wedges.
