  • 1080 gChicken wings
  • 6 gGarlic
  • 2 gLemon zest
  • 40 mlLemon juice
  • 2 gCumin
  • 30 mlOlive oil
  • 21 gHoney
  • 6 gSalt
  • 1 gPepper

Instructions

    Prepare & Marinate

    • Using sharp kitchen scissors, cut each wing at the joint into two pieces (drumette and flat).
    • Mix garlic, lemon zest, lemon juice, cumin seeds, olive oil, salt and pepper in a bowl.
    • Pour the marinade over the wings, toss to coat, cover and refrigerate for at least 1 hour or overnight.

    Bake or Grill & Finish

    • Preheat oven to 200°C (180°C fan) or prepare the barbecue.
    • Bake the wings on a tray for 45–50 minutes until crisp, or grill for about 20 minutes until cooked and browned.
    • Brush the wings with honey during the last 10 minutes to glaze.
    • Serve immediately with lemon wedges and optional sides like olives or flatbreads.
