  • 160 gBasmati rice
  • 320 mlWater
  • 9 gSalt
  • 1 pcsLime
  • 20 gCoriander
  • 300 gChicken breast
  • 1 pcsBell pepper
  • 1 pcsBell pepper
  • 1 pcsOnion
  • 1 cloveGarlic
  • 20 gOlive oil
  • 3 gPaprika powder
  • 2 gCumin
  • 1 gChili powder
  • 1 gOregano
  • 2 gPepper
  • 240 gBlack bean
  • 200 gCorn
  • 200 gTomato

Instructions

    Cook the rice

    • Rinse the rice in a sieve
    • Bring to a boil with water and salt
    • Cook covered on low heat
    • Remove from heat and let steam briefly

    Finish lime rice

    • Zest and juice the lime
    • Roughly chop cilantro
    • Fluff the rice
    • Mix with lime juice, zest and cilantro

    Slice the vegetables

    • Peel the onion and cut into wedges
    • Deseed peppers and cut into strips
    • Peel garlic and finely chop

    Season the chicken

    • Pat the chicken dry
    • Cut into strips
    • Toss with spices and a little oil

    Sear the chicken

    • Heat the pan until very hot
    • Sear the chicken
    • Lower the heat and cook through
    • Keep warm

    Fry fajita vegetables

    • Heat the pan again
    • Sauté onion and peppers until well browned
    • Toast garlic briefly
    • Season with lime juice and salt

    Make the salsa

    • Dice the tomatoes
    • Finely chop the onion
    • Chop the cilantro
    • Mix with lime juice, salt and pepper

    Assemble the bowls

    • Rinse beans and corn
    • Divide rice between bowls
    • Top with vegetables and chicken
    • Add beans, corn and salsa
