  • 200 gTuna
  • 150 gCucumber
  • 150 gBell pepper
  • 200 gTomato
  • 60 gOnion
  • 20 gParsley
  • 60 gOlive
  • 30 mlLemon
  • 20 gOlive oil
  • 10 gMustard
  • 5 gSalt
  • 1 gPepper

Instructions

    Cook farro

    • Rinse farro thoroughly in a sieve
    • Bring salted water to a boil
    • Simmer over medium heat until al dente
    • Drain and let steam off
    • Let cool slightly

    Chop vegetables

    • Dice cucumber
    • Dice bell pepper
    • Halve cherry tomatoes
    • Finely dice onion
    • Roughly chop parsley

    Mix dressing

    • Juice the lemon
    • Whisk with olive oil
    • Emulsify with mustard
    • Season with pepper

    Assemble salad

    • Drain the tuna well
    • Combine farro and vegetables in a bowl
    • Add dressing and toss well
    • Fold in olives
    • Let rest briefly before serving
