- Peel and finely chop or slice the garlic. Coarsely chop the parsley.
- If frozen, thaw prawns and pat dry.

- Heat the olive oil in a large frying pan over medium heat.
- Add the garlic slices and fry for a few seconds until fragrant (do not burn).
- Stir in the prawns and cook 2–3 minutes until they start to turn pink.

- Pour over the dry sherry and cook 1–2 minutes more until prawns are cooked through.
- Sprinkle with chopped parsley and serve immediately.
