  • 400 gButter bean
  • 41.4 gOlive oil
  • 150 gOnion
  • 6 gGarlic
  • 30 gTomato paste
  • 800 gTomato
  • 12 gSugar
  • 3 gOregano
  • 0.3 gCinnamon
  • 6 gParsley

    Prepare the beans

    • Soak the butter beans overnight in plenty of cold water.
    • Next day, drain, rinse and place in a large pot with fresh water.
    • Bring to a boil, reduce heat and simmer about 50 minutes until slightly tender but not falling apart. Drain and set aside.

    Make the sauce

    • Preheat the oven to 180°C (160°C fan).
    • Heat olive oil in a large pan. Add onion and garlic and cook over medium heat for about 10 minutes until softened but not browned.
    • Stir in tomato puree and cook 1 minute.
    • Add fresh tomatoes, sugar, dried oregano and a pinch of cinnamon. Simmer 2–3 minutes and season with salt and pepper.

    Bake and serve

    • Stir the cooked beans into the sauce and transfer to a large ovenproof dish.
    • Bake uncovered for about 1 hour until the beans are tender and the sauce has thickened.
    • Cool slightly, sprinkle with chopped parsley and drizzle with extra olive oil to serve.
