- 800 gTomato

Prepare the beans
- Soak the butter beans overnight in plenty of cold water.
- Next day, drain, rinse and place in a large pot with fresh water.
- Bring to a boil, reduce heat and simmer about 50 minutes until slightly tender but not falling apart. Drain and set aside.

Make the sauce
- Preheat the oven to 180°C (160°C fan).
- Heat olive oil in a large pan. Add onion and garlic and cook over medium heat for about 10 minutes until softened but not browned.
- Stir in tomato puree and cook 1 minute.
- Add fresh tomatoes, sugar, dried oregano and a pinch of cinnamon. Simmer 2–3 minutes and season with salt and pepper.

Bake and serve
- Stir the cooked beans into the sauce and transfer to a large ovenproof dish.
- Bake uncovered for about 1 hour until the beans are tender and the sauce has thickened.
- Cool slightly, sprinkle with chopped parsley and drizzle with extra olive oil to serve.
