- 500 gFlour
- 15 gYeast
- 1 tspSugar
- 2 tbspOil
- 1 tspSalt
- 350 mlWater

Prepare the dough
- Tip the flours into a large bowl or food processor. Add the yeast, sugar and 1 tsp salt and mix well.
- Pour in 350 ml warm water and 2 tbsp olive oil, then process to a soft dough. Knead for about 1 minute.
- Cover and leave in a warm place for about 1 hour until doubled in size.

Shape and rest
- Knock the dough back, tip onto a floured surface and cut in half.
- Roll one half into a rectangle about 20 x 40 cm, trim edges and cut into eight 10 cm squares. Place on a baking tray lined with non-stick paper.
- Repeat with the other half and leave in a warm place for about 30 minutes until slightly risen.

Griddle or grill
- Place the breads directly onto hot grill racks or a hot griddle and cook for 1–2 minutes until they puff up.
- Flip and cook the other side for another 1–2 minutes until lightly charred and golden.
- Transfer to a basket and serve with dips.
