Ingredients

  • 500 gFlour
  • 15 gYeast
  • 1 tspSugar
  • 2 tbspOil
  • 1 tspSalt
  • 350 mlWater

Instructions

    Prepare the dough

    • Tip the flours into a large bowl or food processor. Add the yeast, sugar and 1 tsp salt and mix well.
    • Pour in 350 ml warm water and 2 tbsp olive oil, then process to a soft dough. Knead for about 1 minute.
    • Cover and leave in a warm place for about 1 hour until doubled in size.

    Shape and rest

    • Knock the dough back, tip onto a floured surface and cut in half.
    • Roll one half into a rectangle about 20 x 40 cm, trim edges and cut into eight 10 cm squares. Place on a baking tray lined with non-stick paper.
    • Repeat with the other half and leave in a warm place for about 30 minutes until slightly risen.

    Griddle or grill

    • Place the breads directly onto hot grill racks or a hot griddle and cook for 1–2 minutes until they puff up.
    • Flip and cook the other side for another 1–2 minutes until lightly charred and golden.
    • Transfer to a basket and serve with dips.
