  • 400 gUdon
  • 200 gShiitake
  • 200 gMushroom
  • 200 gSpinach
  • 2 pcsGreen onion
  • 2 cloveGarlic
  • 15 gGinger
  • 60 mlSoy sauce
  • 30 mlMirin
  • 10 mlRice vinegar
  • 10 mlSesame oil
  • 15 mlRapeseed oil
  • 8 gSugar
  • 10 gSesame

Instructions

    Mix the sauce

    • Whisk soy sauce with mirin and rice vinegar
    • Stir in sesame oil
    • Dissolve the sugar

    Cut the vegetables

    • Clean mushrooms and slice them
    • Slice scallions into rings
    • Finely chop garlic
    • Finely grate ginger
    • Wash spinach and drain well

    Cook the udon

    • Warm udon in simmering water following the package directions
    • Drain and briefly rinse
    • Let drain thoroughly

    Sear the mushrooms

    • Heat oil in a large pan until very hot
    • Sear mushrooms in a single layer until browned
    • Briefly toast garlic and ginger
  5. 5

    Finish the stir-fry

    • Add spinach and let it wilt
    • Toss in the udon
    • Pour in the sauce and let it reduce briefly
    • Fold in scallions
    • Sprinkle with sesame and serve hot
