- 1000 gLamb
- 450 gOnion
- 4 gGarlic
- 18 gGaram masala
- 15 gCoriander
- 15 gChili sauce
- 480 gPita
- 480 gTomato
- 500 gRed cabbage
- 150 gYogurt
- 5 gSalt
- 1 gPepper

Prepare the kofta mix
- Put the lamb mince into a large bowl.
- Add grated/finely chopped onions, chopped garlic, garam masala, chopped coriander, chilli sauce, salt and pepper.
- Use your hands to mix everything thoroughly until evenly combined.
- Shape the mixture into 16 small, flat patties. The patties can be frozen for up to 1 month or kept chilled for up to a day.

Grill and assemble
- Preheat grill or grill pan to very high heat.
- Place patties in a single layer on a baking tray (cook in batches if needed).
- Grill 5–6 minutes per side until browned and cooked through.
- Warm the pita breads, spread with yogurt, add patties and top with sliced tomatoes, red onion rings, shredded red cabbage and fresh coriander. Let everyone build their own sandwich.
