  • 200 gChicken breast
  • 120 gRice noodle
  • 900 mlChicken broth
  • 1 pcsZucchini
  • 2 pcsCarrot
  • 150 gMushroom
  • 2 pcsGreen onion
  • 15 gGinger
  • 1 cloveGarlic
  • 1 pcsStar anise
  • 1 tbspSoy sauce
  • 10 gCoriander
  • 1 pcsLime
  • 1 tspChili flakes

    Prep vegetables

    • Cut zucchini into fine strips
    • Julienne the carrots
    • Slice the mushrooms
    • Slice spring onions into rings
    • Roughly chop cilantro
    • Quarter the lime

    • Bring the broth to a boil
    • Simmer ginger and garlic briefly
    • Add spices and let infuse

    Cook chicken

    • Add chicken to the hot broth
    • Gently poach until cooked through
    • Remove and shred into strips

    • Soak rice noodles in hot water
    • Briefly cook vegetables in the broth
    • Divide noodles into bowls
    • Ladle broth and vegetables over

    • Top bowls with chicken
