Ingredients

  • 160 gRice
  • 450 mlWater
  • 800 mlVegetable broth
  • 50 gMiso
  • 200 gTofu
  • 2 pcsGreen onion
  • 1 pcsNori
  • 10 gGinger
  • 5 mlSesame oil

Instructions

    Rinse rice

    • Rinse rice in a sieve
    • Drain well

    Cook rice

    • Bring rice and water to a boil
    • Reduce heat
    • Simmer gently covered
    • Remove from heat and let rest

    Prep ingredients

    • Slice spring onions into thin rings
    • Cut tofu into cubes
    • Cut nori into strips
    • Grate ginger finely

    Heat broth

    • Heat vegetable broth
    • Stir in ginger
    • Let steep briefly

    Mix in miso

    • Dissolve miso in a ladle of hot broth
    • Return to the pot
    • Do not let it boil hard

    Warm tofu

    • Gently add tofu to the soup
    • Warm through gently
    • Add spring onions and nori
    • Finish with sesame oil

    Plate and serve

    • Divide rice into bowls
    • Serve soup over or alongside
