Ingredients

  • 500 gGround beef
  • 300 gEggplant
  • 150 gYogurt
  • 1 pcsEgg
  • 15 gParmesan
  • 400 gTomato
  • 60 gTomato paste
  • 350 gPotato

    Preparation

    • Peel the potatoes, slice or dice them evenly and parboil in salted water for about 10–12 minutes until just tender, then drain.
    • Prick the aubergine all over with a fork and microwave on High for 3–5 minutes until soft; alternatively roast at 200 °C for 20–25 minutes. Let cool.
    • Preheat the grill (broiler) to high.

    Brown the beef

    • Brown the minced beef in a deep ovenproof frying pan over high heat for 4–5 minutes until colored. Season with salt and pepper.
    • Turn down the heat and set aside briefly.

    Prepare the topping

    • Mix Greek yogurt, the beaten egg and grated Parmesan until smooth. Season with salt and pepper.

    Sauce and layering

    • Stir chopped fresh tomatoes and tomato puree into the beef, heat through and season.
    • Add the pre-cooked potatoes and spread the mixture evenly in the pan.
    • Slice the cooked aubergine and arrange the slices on top.
    • Pour the yogurt mixture over the aubergines and smooth the surface.

    Finish

    • Grill until the topping has set and turned golden (3–6 minutes, depending on the oven).
    • Let rest 5 minutes before serving, then portion.
