Preparation
- Peel the potatoes, slice or dice them evenly and parboil in salted water for about 10–12 minutes until just tender, then drain.
- Prick the aubergine all over with a fork and microwave on High for 3–5 minutes until soft; alternatively roast at 200 °C for 20–25 minutes. Let cool.
- Preheat the grill (broiler) to high.

Brown the beef
- Brown the minced beef in a deep ovenproof frying pan over high heat for 4–5 minutes until colored. Season with salt and pepper.
- Turn down the heat and set aside briefly.

Prepare the topping
- Mix Greek yogurt, the beaten egg and grated Parmesan until smooth. Season with salt and pepper.

Sauce and layering
- Stir chopped fresh tomatoes and tomato puree into the beef, heat through and season.
- Add the pre-cooked potatoes and spread the mixture evenly in the pan.
- Slice the cooked aubergine and arrange the slices on top.
- Pour the yogurt mixture over the aubergines and smooth the surface.

- Grill until the topping has set and turned golden (3–6 minutes, depending on the oven).
- Let rest 5 minutes before serving, then portion.
