  • 15 gRapeseed oil
  • 50 gPeanut
  • 3 gMustard seed
  • 2 gCumin
  • 5 gCurry leaves
  • 4 gSalt
  • 2 gTurmeric
  • 30 mlWater

    Prepare poha

    • Place poha in a sieve
    • Rinse briefly under cold water
    • Drain well
    • Mix with salt and turmeric
    • Let it rest briefly

    Chop aromatics

    • Finely dice the onion
    • Thinly slice the chili
    • Finely chop the ginger
    • Juice the lemon
    • Roughly chop the cilantro

    • Heat oil in a pan
    • Toast peanuts until golden
    • Drain briefly on paper towels

    Temper spices

    • Add mustard seeds to the hot oil
    • Wait until they start popping
    • Briefly toast cumin
    • Add curry leaves
    • Cook onion until translucent
    • Briefly sauté ginger and chili

    Cook the poha

    • Add poha to the pan
    • Gently fold to combine
    • Cover and let it steam briefly
    • Loosen with a little water if needed
    • Mix in the peanuts
    • Season with lemon juice
    • Sprinkle with cilantro
