Ingredients

  • 780 gChicken thigh
  • 2 tbspOlive oil
  • 1 tspFennel seeds
  • 1 tspCumin
  • 1 tspPaprika powder
  • 1 pcsGarlic clove
  • 1 tspRed wine vinegar
  • 15 pcsWood skewer
  • 80 gAioli

    Prepare & Marinate

    • If using wooden skewers, soak them in water for about 10 minutes to prevent burning.
    • Cut the chicken thighs into about 3 cm pieces and put them in a bowl.
    • Add 1 tbsp olive oil, fennel seeds, ground cumin, sweet smoked paprika, crushed garlic and red wine vinegar, mix well and season with salt and pepper.
    • Let the chicken marinate for at least 10 minutes; preferably 30 minutes up to 24 hours in the fridge.

    Skewer & Cook

    • Thread 2–3 pieces of chicken onto each skewer.
    • Heat the remaining 1 tbsp olive oil in a frying pan or lightly oil a griddle.
    • Sear the skewers over high heat for 3–4 minutes per side until browned and cooked through. Cook in batches if needed and keep finished skewers warm.
    • Serve with smoky aioli if desired.
