- 780 gChicken thigh
- 2 tbspOlive oil
- 1 tspFennel seeds
- 1 tspCumin
- 1 tspPaprika powder
- 1 pcsGarlic clove
- 1 tspRed wine vinegar
- 15 pcsWood skewer

Prepare & Marinate
- If using wooden skewers, soak them in water for about 10 minutes to prevent burning.
- Cut the chicken thighs into about 3 cm pieces and put them in a bowl.
- Add 1 tbsp olive oil, fennel seeds, ground cumin, sweet smoked paprika, crushed garlic and red wine vinegar, mix well and season with salt and pepper.
- Let the chicken marinate for at least 10 minutes; preferably 30 minutes up to 24 hours in the fridge.

Skewer & Cook
- Thread 2–3 pieces of chicken onto each skewer.
- Heat the remaining 1 tbsp olive oil in a frying pan or lightly oil a griddle.
- Sear the skewers over high heat for 3–4 minutes per side until browned and cooked through. Cook in batches if needed and keep finished skewers warm.
- Serve with smoky aioli if desired.
