- 80 gChorizo
- 300 gSpaghetti
- 20 gParsley
- 2 pcsBell pepper
- 30 mlOlive oil
- 50 gParmesan

Prepare
- Bring a large pot of water to a rolling boil.
- Snip the chorizo into strips with scissors. Roughly chop the parsley. Core and slice the peppers.

Cook pasta
- When the water is boiling, add the spaghetti with plenty of salt, stir and return to the boil.
- Cook according to package instructions until al dente.
- Reserve about half a mug (≈120 ml) of pasta water, then drain the pasta.

Fry chorizo and pepper
- Heat the olive oil in a large frying pan, add the chorizo and pepper strips and plenty of black pepper.
- Cook for 1–2 minutes until the chorizo is hot and the oil takes on a reddish hue from the paprika.

Finish and serve
- Tip the drained spaghetti into the frying pan with the chorizo and peppers.
- Add the parsley and Parmesan, toss well and splash in some reserved pasta water to moisten.
- Serve with extra Parmesan at the table.
