  • 80 gChorizo
  • 300 gSpaghetti
  • 20 gParsley
  • 2 pcsBell pepper
  • 30 mlOlive oil
  • 50 gParmesan

    Prepare

    • Bring a large pot of water to a rolling boil.
    • Snip the chorizo into strips with scissors. Roughly chop the parsley. Core and slice the peppers.

    Cook pasta

    • When the water is boiling, add the spaghetti with plenty of salt, stir and return to the boil.
    • Cook according to package instructions until al dente.
    • Reserve about half a mug (≈120 ml) of pasta water, then drain the pasta.

    Fry chorizo and pepper

    • Heat the olive oil in a large frying pan, add the chorizo and pepper strips and plenty of black pepper.
    • Cook for 1–2 minutes until the chorizo is hot and the oil takes on a reddish hue from the paprika.

    Finish and serve

    • Tip the drained spaghetti into the frying pan with the chorizo and peppers.
    • Add the parsley and Parmesan, toss well and splash in some reserved pasta water to moisten.
    • Serve with extra Parmesan at the table.
