  • 150 gOnion
  • 300 gBell pepper
  • 50 gChorizo
  • 6 gGarlic
  • 14 gOlive oil
  • 250 gRice
  • 400 gTomato
  • 200 gShrimp
  • 500 mlWater

    Prepare and fry

    • Boil the kettle.
    • In a non-stick frying pan (with lid), heat the olive oil and fry the onion, red and green peppers, chorizo and minced garlic over high heat for about 3 minutes until lightly browned.

    Cook rice and add prawns

    • Stir in the rice and chopped tomatoes, add 500 ml boiling water, cover and cook over high heat for 12 minutes.
    • Uncover and stir — the rice should be almost tender. Stir in the prawns, add a splash more water if needed, and cook a further minute until prawns are pink and rice is tender.
