  • 180 gSushi rice
  • 300 mlWater
  • 30 mlRice vinegar
  • 20 gSugar
  • 3 gSalt
  • 4 pcsEgg
  • 30 mlSoy sauce
  • 5 mlSesame oil
  • 150 gCucumber
  • 1 pcsAvocado
  • 2 pcsGreen onion
  • 2 pcsNori
  • 160 gSalmon
  • 8 gSesame
  • 1 pcsLime

Instructions

    Cook the rice

    • Rinse rice thoroughly until the water runs clear
    • Bring to a boil with water and cook gently covered
    • Remove from heat and let rest covered

    Mix sushi seasoning

    • Stir vinegar, sugar, and salt until dissolved
    • Transfer rice to a bowl and fold in the seasoning
    • Let rice cool to body temperature

    Make tamago eggs

    • Whisk eggs with soy sauce and sugar
    • Heat oil in a pan
    • Cook the egg mixture over medium heat until softly set
    • Cut into pieces and let cool briefly

    Prepare toppings

    • Halve the cucumber lengthwise and slice thinly
    • Halve, pit, and slice the avocado
    • Slice spring onions into thin rings
    • Cut nori into strips

    Assemble the bowl

    • Divide rice between bowls
    • Arrange tamago, smoked salmon, cucumber, and avocado on top
    • Sprinkle with sesame
    • Season with soy sauce and lime juice
