  • 375 gFlour
  • 3 gCream of tartar
  • 2 gBaking soda
  • 0.8 gNutmeg
  • 205 gLard
  • 440 gSugar
  • 2 pcsEgg
  • 5 mlVanilla extract

Instructions

    Mix dry ingredients

    • Combine flour, cream of tartar, baking soda and ground nutmeg in a bowl and set aside.

    Beat wet ingredients and combine

    • Beat the melted and slightly cooled shortening with the packed brown sugar until well combined.
    • Beat in the eggs one at a time, then add the vanilla extract.
    • Gradually blend in the dry ingredients until a uniform dough forms.

    Shape and chill

    • Shape dough into a log about 1½ inches (≈ 3.8 cm) in diameter.
    • Wrap in wax paper or foil and chill for 4 hours or overnight.

    Preheat and prepare baking sheets

    • Preheat oven to 180 °C (375 °F).
    • Lightly grease two baking sheets or line with parchment.

    Slice and bake

    • Slice the log into ¼ inch (≈ 6 mm) thick slices and place about 1 inch (≈ 2.5 cm) apart on the baking sheets.
    • Bake for 8–10 minutes until lightly colored at the edges.
    • Cool on wire racks.
