Prepare the dough
- Put the eggs and sugar in a mixing bowl and beat very vigorously with a hand mixer or stand mixer for about 15 minutes until the mixture is pale and airy.
- Add the ground cinnamon, ground cardamom, ground cloves, grated lemon zest and the finely chopped nuts and briefly mix in.
- Fold in the flour spoonwise until a homogeneous, rather thick batter forms.

Shape
- Take a teaspoon of dough, shape briefly into an elongated piece (cigar shape).
- Roll each piece in sifted icing sugar so they are lightly coated.

Bake
- Grease a baking tray with butter or line with baking paper and place the sugared pieces with space between them.
- Bake in a preheated oven at 160 °C (top/bottom heat) for about 12–15 minutes until pale golden.
- Remove from the oven, let cool briefly and then completely on a rack.
