Ingredients

  • 900 gPotato
  • 20 mlSoy sauce
  • 20 mlRapeseed oil
  • 40 gCornstarch
  • 30 gOnion
  • 5 gGarlic
  • 2 gBell pepper
  • 3 gVegetable broth
  • 2 gSugar
  • 10 mlVinegar
  • 1 gSalt
  • 1 gPepper

Instructions

    Preparation

    • Boil potatoes in their skins in salted water until almost tender (still slightly firm).
    • Drain, let steam off briefly, peel and mash while still hot.

    Mixing

    • Stir soy sauce and vinegar into the hot mashed potatoes.
    • Work in rapeseed oil and cornflour until the mixture is thick and even (similar consistency to peanut butter).

    Season

    • Stir in onion, garlic, paprika, vegetable stock powder, sugar, salt and pepper.
    • Adjust seasoning with more soy sauce, vinegar or paprika if desired.

    Shape and Serve

    • Press the mixture into a lightly oiled small round mould and smooth the top.
    • Cool, then unmould and serve as a spread or in slices.
