Prepare
- Halve the hard-boiled eggs lengthwise.
- Carefully remove the yolks and place them in a bowl; set the whites aside without breaking them.

Make the filling
- Mash the yolks with a fork until fine.
- Stir in the mayonnaise, sugar, mustard, vinegar, salt and pepper until smooth. Taste and adjust seasoning.

Fill and serve
- Spoon or pipe the yolk mixture back into the egg white halves.
- Optionally dust lightly with paprika and serve.
