  • 45 gMayonnaise
  • 12 gSugar
  • 5 gMustard
  • 5 mlVinegar
  • 2 gSalt
  • 1 gPepper
  • 1 gBell pepper

    Prepare

    • Halve the hard-boiled eggs lengthwise.
    • Carefully remove the yolks and place them in a bowl; set the whites aside without breaking them.

    Make the filling

    • Mash the yolks with a fork until fine.
    • Stir in the mayonnaise, sugar, mustard, vinegar, salt and pepper until smooth. Taste and adjust seasoning.
  3. 3

    Fill and serve

    • Spoon or pipe the yolk mixture back into the egg white halves.
    • Optionally dust lightly with paprika and serve.
