  • 170 gButter
  • 275 gBrown sugar
  • 1 pcsEgg
  • 80 mlMilk
  • 7.5 mlVanilla extract
  • 270 gOats
  • 120 gFlour
  • 2.5 gBaking soda
  • 3 gSalt
  • 0.65 gCinnamon
  • 165 gRaisins
  • 90 gWalnut

    Preparation

    • Preheat the oven to 175 °C (350 °F).
    • Lightly grease a baking sheet with oil, butter or line it with baking paper.
    • Coarsely chop the walnuts if not already chopped.

    Make the dough

    • Combine butter (or chosen fat), brown sugar, egg, milk and vanilla in a large bowl.
    • Beat with a hand mixer on high for 1–2 minutes until well combined and slightly creamy.
    • In another bowl mix oats, flour, baking soda, salt and cinnamon.
    • Add the dry mix to the wet ingredients and mix on low to medium until just combined.
    • Fold in the raisins and chopped walnuts with a spoon.

    Baking

    • Drop rounded tablespoonfuls of dough onto the prepared baking sheet, leaving about 5 cm between each.
    • Bake 10–13 minutes until the edges are lightly browned.
    • Let the cookies cool on the sheet for 2–3 minutes, then transfer to a wire rack to cool completely.

    Tips

    • You can substitute applesauce (for softer cookies), a butter+vegetable oil mix or shortening for the fat. Adjust baking time if needed.
    • Yield: about 24 cookies, depending on size.
