Preparation
- Preheat the oven to 175 °C (350 °F).
- Lightly grease a baking sheet with oil, butter or line it with baking paper.
- Coarsely chop the walnuts if not already chopped.

Make the dough
- Combine butter (or chosen fat), brown sugar, egg, milk and vanilla in a large bowl.
- Beat with a hand mixer on high for 1–2 minutes until well combined and slightly creamy.
- In another bowl mix oats, flour, baking soda, salt and cinnamon.
- Add the dry mix to the wet ingredients and mix on low to medium until just combined.
- Fold in the raisins and chopped walnuts with a spoon.

Baking
- Drop rounded tablespoonfuls of dough onto the prepared baking sheet, leaving about 5 cm between each.
- Bake 10–13 minutes until the edges are lightly browned.
- Let the cookies cool on the sheet for 2–3 minutes, then transfer to a wire rack to cool completely.

Tips
- You can substitute applesauce (for softer cookies), a butter+vegetable oil mix or shortening for the fat. Adjust baking time if needed.
- Yield: about 24 cookies, depending on size.
