- Peel, wash and finely grate the potatoes.
- Place the grated potatoes in a clean kitchen towel or fine sieve and squeeze out as much liquid as possible.
- Put the drained potato mass into a large bowl.

Make the batter
- Add eggs, sour cream, flour and salt to the potatoes and mix well until a cohesive mixture forms. If too wet, add a little more flour.
- Taste and adjust seasoning if needed.

- Heat butter in a large pan (medium-high heat).
- Spoon portions of the potato mixture into the pan and flatten into patties.
- Fry 3–5 minutes per side until golden and crispy. Drain on paper towels.
- Serve hot (e.g. with extra sour cream or applesauce).
