  • 2 pcsEgg
  • 30 gSour cream
  • 20 gFlour
  • 6 gSalt
  • 30 gButter

    Preparation

    • Peel, wash and finely grate the potatoes.
    • Place the grated potatoes in a clean kitchen towel or fine sieve and squeeze out as much liquid as possible.
    • Put the drained potato mass into a large bowl.

    Make the batter

    • Add eggs, sour cream, flour and salt to the potatoes and mix well until a cohesive mixture forms. If too wet, add a little more flour.
    • Taste and adjust seasoning if needed.

    Frying

    • Heat butter in a large pan (medium-high heat).
    • Spoon portions of the potato mixture into the pan and flatten into patties.
    • Fry 3–5 minutes per side until golden and crispy. Drain on paper towels.
    • Serve hot (e.g. with extra sour cream or applesauce).
