  • 160 gGreen pea
  • 1 pcsOnion
  • 2 pcsCarrot
  • 150 gCeleriac
  • 1 pcsLeek
  • 1 cloveGarlic
  • 700 mlVegetable broth
  • 1 tbspRapeseed oil
  • 1 pcsBay leaf
  • 1 tspMarjoram
  • 0.5 tspSalt
  • 0.25 tspPepper
  • 2 sliceRye whole grain bread

Instructions

    Chop the vegetables

    • Finely dice the onion
    • Dice carrot and celeriac
    • Slice leek into rings
    • Finely chop the garlic

    Start the soup

    • Heat oil in a pot
    • Sweat the vegetables until translucent
    • Stir in the peas
    • Pour in the broth
    • Add bay leaf
    • Simmer gently
    • Stir occasionally

    Toast the croutons

    • Cut bread into cubes
    • Toast in a pan until crisp

    Season and serve

    • Remove the bay leaf
    • Blend the soup roughly
    • Season with marjoram, salt and pepper
    • Pour into jars
    • Top with croutons
